In the video, Nanaaba, took us through a step by step process on how to prepare or make Lamb Pilau Masala Party Style. Lamb Pilau Masala is a popular East Africa (Tanzania, Kenya, Uganda, Somalia, etc) cuisine. It’s like their Jollof Rice over there.
Ingredients used for Pilau Masala:
1. 1/2 tsp cardamom pods
2. 1/2 tsp cumin seeds
3. 3 star anise
4. 1 tsp coriander seeds
5. 1/2 tsp aniseed
6. 3 cinnamon sticks
7. 1/2 cup pine nuts
8. 1/2 cup raisins
9. 6 serrano chilis thinly sliced
10. 12 cloves garlic thinly sliced
11. 12 cups jasmine rice
12. 18 oz broth (chicken or beef or both)
13. 2 tsp all purpose seasoning
14. Salt and pepper
15. Lbs lamb chops
16. 4 tbsp ghee
17. 1 cup vegetable oil
18. 2-4 cups water
Ingredients For Kachumbai (chunky salsa)
1. 3 large tomatoes seeded and sliced
2. 2 serrano or jalapeño chilli
3. 1 red or green bell pepper
4. Half a large onion sliced or soaked in a solution of 2 tbsp of vinegar and 1 cup water, for 5 minutes, and drained.
5. Salt and pepper
6. Juice of half a lime or lemon
7. 1 tsp red wine vinegar
