Information reaching Kossyderrickent has it that Nanaaba’s Kitchen is here again with another amazing recipe for Potato Leave Sauce.

Taking to her YouTube channel, Nanaaba’s Kitchen, shared the recipe/ingredients for her delicious potato leaves sauce. 


INGREDIENTS:


* 1/2 Lbs each ox tail, cow foot, lamb shank, and1/4 Lbs cow tripe

* Other protein – 1/2 cup deboned dry smoked herrings, four 1 & 1/2” steak pieces of grilled mackerel 

* 1 large onion chopped

* 2 scotch bonnet chili split open (more left whole for garnish)

* 1 tbsp ginger garlic paste (made with equal parts ginger and garlic)

* 1 heaping tbsp ogeri/ogiri (substitute with fish sauce, meso paste, shrimp paste, momoni -fermented cured fish) Link to oheri recipe 

* Salt to taste

* 1 – 2 cups water to cook and tenderize meat

* 1/4 cup red palm oil (zomi – available at African markets in the diaspora, or Amazon.com)

* 3 lbs chopped potato leaves (if purchased fresh, wash at least twice. First in salt and water solution, then rinse with water, chop off woody dense stems, then chop tender stems with leaves) 

* 1 heaping tbsp peanut butter

* 6 okro fingers chopped
